康普茶是以紅茶及糖為基底原料,接種醋酸菌、乳酸菌及酵母菌發酵而成,又稱為紅茶菇飲料(Tea fungus beverage)。坊間家庭式製作康普茶,大多接種康普茶菌母(Kombucha cellulose pellicle),即浮在康普茶發酵液表面的醋酸菌代謝物細菌性纖維素皮膜作為菌酛(starter),英文稱為SCOBY(Symbiotic culture of bacteria and yeasts),進行茶飲發酵。國際大廠百事可樂、可口可樂、星巴克等紛紛投入康普茶飲市場,更衍生出多元化的康普茶發酵飲系列產品。2016年,百事公司以2億美元收購美國康普茶品牌Ke-Vita (Pepsi,2016/11/22)。2018年,可口可樂公司收購澳洲康普茶生產商Organic & Raw Trading Co.,擁有了澳洲市占率第一的康普茶品牌MOJO,跨足經營康普茶飲市場(Coca-cola,2018/9/19)。2018年,星巴克透過旗下Evolution Fresh品牌推出全新有機康普茶飲系列產品(Starbucks,2018/8/8)。2019年,全球最大啤酒集團「安海斯-布希英博(Anheuser-Busch InBev)」入主投資Kombrewcha品牌,由啤酒業跨足酒精性康普茶飲料生產,更加速擴大康普茶飲料的市場規模。
